Smoked Sausage Skillet


I'm all about getting a healthy dinner on the table, and in a quick manner! I have one child who isn't picky at all, and one that is fairly picky...but if you give her anything with noodles, she's all over it! This dinner was perfect! Protein, veggies, and noodles!


INGREDIENTS:
  • 1 pound Turkey Kielbasa
  • 3 cups cabbage, chopped
  • 1 celery rib, finely chopped
  • 1 tablespoon coconut oil
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon poultry seasoning
  • 2 cups cooked noodles (we use Gluten-free)

In a large skillet, saute the kielbasa, cabbage and celery in oil for 5 minutes or so. Add the mustard, garlic salt and poultry seasoning. Cook and stir over medium-heat for 4-6 minutes or until vegetables are tender. Stir in noodles and heat through. SERVES 4

Porcupine Meatballs



My mom and I were talking the other day, and she asked if I had ever made my kids Porcupine Meatballs. I can't believe I have never made them for my kids! I grew up eating them and loving them..it was time to introduce them, and it was a winner! Even my picky little Princess loved them!! It was time for me to share them with all of you, and if you have never made them..serious you need to! They are that good.

Here's what you'll need: 1 pound lean ground beef, 1 (6.8 oz) box Beef Rice a Roni, 1 egg, and 2 1/4 cup water

Mix together your ground beef, egg, and rice. Only use the rice from the box, save the seasoning packet for later on. Make sure you get everything mixed and combined well, don't be afraid to get your hands dirty...get them in there and mix away!

Form golf sized meatballs

Brown meatballs on top and bottom, don't worry about cooking them all the way, they will finish cooking in a minute (or 30).

Mix together water and beef seasoning mix...

...and pour over top of meatballs. Reduced heat to medium-low, bring to a simmer, cover and cook for 30 minutes, or until meatballs are cooked through and rice is soft. Most of the liquid will cook away.


Porcupine Meatballs
Serves 4...about 3 meatballs each
8 Weight Watcher Points Plus

1 pound lean ground beef
1 (6.8 ounce) box Beef Rice a Roni
1 egg
2 1/4 cup water

Mix together the ground beef, egg and rice. Save the seasoning packet for later.

Shape the meat mixture into about golf-sized meatballs. Heat a large skillet and brown top and bottoms, don't worry about cooking through, they will finish cooking soon.

Mix the water and seasoning packet and pour over meatballs. Reduce heat to medium low heat, cover and simmer for 30 minutes.

Lemon Bar Delight

I follow some amazing women on Instagram who are all on their own Weight Loss journey's as well! I got this simple idea from one of them the other day, and had to share it with you all!


This little treat was a perfect way to end my day! My family was having ice cream, and I didn't want to use my points on that...so I remembered seeing this idea. WINNER


WHAT YOU NEED:
  • 1 Fiber One Lemon Bar
  • 1-2 tbsp fat-free whipped topping
  • 1 tsp sprinkles
Top your lemon bar with the whipped topping and sprinkles....ENJOY!

Serves 1 for 2 Points Plus

Crock-pot Pineapple Chicken




Tonight we tried a new recipe that I found over at Mommy's Fabulous Finds! It's always nice when you find something the whole family enjoys.

Crock-Pot Pineapple Chicken
Serves 6 - 7 Points Plus

3 or 4 boneless skinless chicken breasts (I used 3 pretty big ones)
1 cup pure cane sugar
1/4 cup soy sauce 
1/2 cup pineapple juice (use the juice from your pineapple chunks, I ended up with 3/4 of a cup, so just used it all)
1/2 cup ketchup
2 tbsp balsamic vinegar
1 tbsp mustard
16 oz can pineapple (tidbits or crushed)

Combine sugar, soy sauce, pineapple juice, ketchup, vinegar and mustard together in a small bowl. Add chicken breasts to the crock-pot, then top with sauce mix and pineapple. Cook on low for 7-8 hours or on high for 4 hours.

Chocolate Blueberry Smoothie



INGREDIENTS
  • 1 cup Almond Milk or Water
  • 1 scoop Chocolate Protein Powder
  • 1 - 2 cups frozen blueberries
  • 1 frozen banana 
DIRECTIONS
Add all ingredients into a blender and blend until smooth! ENJOY!!

Orange Dreamsicle

It's Day 18 of 31 Days of Smoothies!



Ingredients
  • 1 cup almond milk
  • 1 scoop vanilla protein powder (here's my favorite)
  • 2 tbsp orange juice concentrate
  • 1 banana
  • 1 small orange, peeled & sectioned
  • 1 tbsp honey (or sweetener of your choice)
Directions
Add all ingredients to blender and blend until smooth, ENJOY!!

Green Goodness Smoothie

Banana Split Smoothie




Ingredients
  • 1 cup almond milk
  • 2 scoops vanilla protein powder (here's what I like)
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 frozen banana
  • 1/2 - 1 cup frozen strawberries
  • dash cinnamon 
Directions
Add all ingredients to the blender and blend until smooth. Enjoy!!

Salted Caramel Pumpkin Latte Smoothie

It's Day 15 of 31 Days of Smoothies!



Ingredients
  • 1 cup almond milk
  • 1/2 cup brewed coffee, cooled
  • 2 tbsp canned pumpkin
  • 1 1/2 tbsp caramel topping
  • 1 tbsp vanilla
  • 1/4 tsp pumpkin pie spice
  • 1 scoop Vanilla Chai Protein Powder (here is what I use)
  • Ice
  • Whipped Topping
  • Extra Caramel
  • Sea Salt
Directions
Add everything except the whipped topping, extra caramel and salt to the blender and blend until smooth. Top with whipped topping, drizzle caramel and sprinkle salt on top.

Raspberry Coconut Smoothie




Ingredients
  • 1 cup vanilla coconut milk
  • 2 scoops vanilla protein powder (here's my favorite)
  • 1/2 tsp vanilla extract
  • 1/4 tsp coconut extract
  • 1 cup frozen raspberries 
Directions
Add all ingredients to the blender and blend until smooth. Enjoy!

Strawberry Banana Orange Smoothie

  • 1/2 cup orange juice
  • 1/2 cup green tea - chilled

Green Pineapple Berry Smoothie

Ingredients
  • 1 - 1 1/2 cups apple juice
  • 1 - 2 handfulls spinach
  • 1/2 cup frozen pineapple
  • 1/2 cup frozen strawberries
  • 1 tsp cinnamon
  • sweetener of choice
Directions
Add everything to the blender and blend until smooth! Enjoy!!

Chocolate Peanut Butter Smoothie




Ingredients
  • 1 cup chocolate almond milk
  • 2 scoops Vanilla Protein Powder (here is what I use)
  • 1 tbsp cocoa powder
  • 2 tbsp PB2 (I like to use the chocolate one)
  • 1 tsp vanilla extract
  • 1 banana
  • sweetener of choice
  • Ice 
Directions
Add everything to a blender, and blend until smooth. Enjoy!!

Cinnamon Chai Tea

Day 9 of 31 Days of Smoothies
If you're new here, I'm posting a new smoothie everyday through the month of October!


Fall time for me means Chai Tea!!! I love me some Chai Tea. So combining two of my loves was only the right thing to do!


Instructions
  • 1/2 cup almond milk
  • 1/2 cup Bolothouse Farms Vanilla Chai Tea
  • 2 scoops Vanilla Chai Protein Mix
  • 1 frozen banana
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • ice
Directions 
Add everything to the blender and blend away. Enjoy!!
