Chicken & Mandarin Oranges
Serves 4
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
4 boneless skinless chicken breasts (4 oz each)
11 ounces mandarin oranges canned in their own juices
1 small onion, chopped
1/8 teaspoon crushed red pepper flakes (more or less according to taste)
2 teaspoons cornstarch
2 tablespoons water
2 scallions, chopped
In a small bowl, combine the salt, ginger and pepper. Sprinkle over both sides of chicken.
Drain oranges, reserving juices. Stir juice, onion and red pepper flakes together and pour into crockpot. Add chicken breasts, cover crock-pot and cook on low 6-8 hours.
The last few minutes of cooking, add cornstarch mixed in the water, and stir till warm.
When ready to serve, I served mine over brown rice, with scallions and mandarin oranges scattered over the top.
