Meals for the week of January 28th

My husband and I have a bet going on who will lose the most weight from the 1st of the year, to Valentines Day, and I'm not doing too good! I am deteremined to get back on track this week, and what helps me the most, planning ahead. So I sat down Saturday, and planned my menu, and wrote my grocery list, then went shopping on today (Sunday) when I didn't have to take the kids with me!!

I'm pretty boring, and like the same breakfast everyday. I always have a cup of Whole-Grain Cheerios with 1/2 cup of almond milk, and a banana, plus a cup of tea with honey.

Lunches are always the hardest for me for some reason! I decided to not make it too hard on myself and bought some frozen meals...yes I know, I know they aren't the best for you...but you know what, they are better than what I would normally eat, so I'll be enjoying them! I always add a salad along with them too. I'll will also probably enjoy some leftovers.

Dinners I'm trying all new recipes! I like trying new stuff all the time, and I love cooking, so this week should be fun.

MONDAY - Slow Cooked Chicken Stew
TUESDAY - Asian Spiced Chicken Tenders, rice & peas
WEDNESDAY - Black Bean Quesadillas & a green salad
THURSDAY - Slow Cooked Salisbury Steak, mashed potatoes & salad
FRIDAY - Baked Cranberry Pork Chops, rice & green beans

I'll try and post the recipes after I have made them to let you know what we think!

I'm also trying a new recipe tonight...I hope it turns out good...it sounds good!!!!

  2. If you pick the frozen meals by looking at the nutrition panel, they can be a very healthy lunch! Thanks so much for sharing on Busy Monday!
