Sausage Stuffed Zucchini Boats

I have seen lots of recipes out there for Zucchini boats and have been wanting to give them a try. Last night we tried this one that I found over at The Skinny Taste. And OMG it was GREAT!!! I did a few different changes to it, but it was very good.



Here's what you need: Spaghetti Sauce, Italian Turkey Sausage, Garlic, Onion, Zucchini, Mozzarella, and Grated Parmesan. (The recipe called for oil, but I didn't use any, there was plenty in the pan after my sausage cooked).


Bring a large pot of water to a boil.
Preheat oven to 400 degrees.


Cut zucchini in half lengthwise and use a spoon to scoop out the flesh.


Chop the scooped out flesh of the zucchini into small pieces and set aside.


Drop zucchini halves in boiling water and cook for 1 minute. Remove from water.


Place 1/4 cup of sauce in the bottom of a 9x13" baking dish, and place zucchini halves cut side up.

In a large saute pan, brown sausage; set aside. In remaining oil, add onion, and garlic. Cook on medium-low heat for about 2-3 minutes, until onions are translucent. Add chopped zucchini, season with salt & pepper and cook another 2-3 minutes. Combine with sausage and cook a few more minutes.


Using a spoon, fill each hollowed zucchini with cooked sausage mixture, pressing firmly. Top each with sauce, mozzarella, and Parmesan cheese. Cover with foil and bake for 35 minutes until cheese is melted and zucchini is cooked through.


This was another winner with my family! Both my kids told me they didn't like Zucchini when I put it on their plates...after taking a bite, they both cleaned their plates :)

1 1/4 cup marinara sauce
4 (31 ounces) medium zucchini
1/2 small onion, finely diced
3 cloves garlic, crushed
14 oz Italian Turkey Sausage, casings removed
1/2 cup part-skim mozzarella, shredded
8 tsp grated Parmesan cheese

  3. This looks so tasty! I have made a similar grilled cheeseburger stuffed zucchini and it's wonderful. Never thought to boil the zucchini first though -- great idea.
