Here's another quick & easy meal!! And with Cinco De Mayo around the corner...it's the perfect kid friendly meal to cook up.
Here's what you'll need:
Ground Beef, Refried Beans, Corn, Black Bean Salsa, Taco Seasoning, Tortilla Chips & Cheese
Preheat oven to 350 degrees. Cook 1 pound lean ground beef over medium-high heat until browned.
Mix in salsa, refried beans and taco seasoning. Reduce heat to low and cook for 3-4 minutes until warmed through.
Layer in an 8x8 pan, chips, meat mixture, chips, meat mixture and top with cheese.
Bake uncovered for 20-25 minutes, until casserole is hot and cheese is melted. Top with your favorite taco toppings, in our house, it's lettuce, sour cream and taco sauce.

1 pound lean ground beef
16 ounces refried beans
1 cup Corn, Black Bean Salsa
1 packet taco seasoning
2 cups Tortilla Chips, crushed
1 cup shredded cheese
Toppings of your choice: Lettuce, Sour Cream, Taco Sauce, Tomatoes, Black Olives, Avocado
Preheat oven to 350 degrees. Heat a large skillet over medium-high heat and cook ground beef until browned, about 5 to 7 minutes. Drain off any fat. Stir in refried beans, salsa, and taco seasoning. Reduce heat to low and cook 3-4 minutes, until mixture is heated through. Spread 2 cups of the crushed tortilla chips in the bottom of an ungreased 2 quart baking dish. Evenly layer the meat mixture on top of the chips. Sprinkle cheese and remaining tortilla chips on top of the casserole. Bake uncovered for 20-25 minutes until casserole is hot and cheese is melted. Top with topping of your choice!
