Ginger Lime Chicken Kabobs

 One of my favorite things about this time of year is grilling...and food on a stick! So when I came across this recipe, I knew I had to make it! It was hit with my family.


Here's what you'll need:


Butter, Green Onions, Ginger, Garlic, Lime, Soy Sauce, Red Wine Vinegar (all I had on hand was a Raspberry Vinegar, balsamic would be good too), chicken, sugar, onion, zucchini & skewers


First things first! If you're going to use wooden Skewers, you will want to soak them in water for at least an hour....the longer the better. I soaked mine for about 3 hours, and they still burnt.


In a saucepan over medium-low heat, you'll want to melt your butter 


Add the green onions, garlic & ginger and cook for about 2 minutes.


Add the soy sauce, vinegar, sugar and lime. Turn off the heat and let cool


Cube the chicken, zucchini and onion


Add chicken to a bag, and zucchini & onion to another, and add the marinade to each bag. Put in fridge and let sit for 1 to 3 hours.


When the chicken & veggies are done marinating pull out of the fridge. Don't freak, the butter will have hardened and will look kind of nasty! It's all good!! It is now time to skewer them


Get your grill nice and hot, and cook them over medium heat until cooked through.


While everything is cooking, stop and enjoy the view for a minute....just don't forget about your skewers :)


It's time to eat!! We had ours with Watermelon, because watermelon goes good with anything this time of year!

Ginger Lime Chicken Kabobs

2 Chicken Breasts
2 medium zucchini
1/2 an onion
1/2 stick unsalted butter
2 garlic cloves, minced
1 tbsp minced ginger
2 green onions, cut 1 1/2 inches long
1/2 lime, juiced & zest
3 tbsp sugar
1 tbsp red wine vinegar
1/2 cup soy sauce

If you're using wooden skewers, soak in water for at least an hour...the longer the better!

Add butter to a sauce pan and melt the butter, then add the garlic, ginger and green onions; cook for about 2 minutes. Add the lime, sugar, vinegar & soy sauce; remove from heat and let cool.

Cube your chicken, zucchini & onions. You'll want to separate the veggies and the chicken into two different bags, then pour the marinade into each bag. Let sit in the fridge and marinate for 1-3 hours. 

It's time to skewer! Don't be alarmed, when you remove the chicken and veggies from the fridge, the butter will have hardened, it's ok!! Skewer away.

Get your grill hot, and cook over medium heat until chicken is cooked through.  Enjoy!

10 Easy Ways to Green Up your Life



1. Start by replacing a bunch of your cleaners (your general spray cleaner, glass cleaner, counter top cleaner, floor and bathroom cleaners) with a natural, nontoxic all-purpose cleaner.

This one product can replace almost everything….. Really! I recommend getting the whole Get Clean Kit though, it's amazing!!


2. Replace your laundry detergent with a natural nontoxic one so the clothes you wear and the sheets you sleep on have no fumes for you to breathe.  

3. Go to your bathroom and read the shampoo, makeup and moisturizer labels. Ask yourself, “Do I really need scent in these products?”

Take stock of all of your other products and try to replace one a week with a safer, greener choice.

4. Use BPA-free plastic baby bottles and fill them with breast milk or organic formula.

Choose powdered formula over canned formula to avoid BPA leaching from the can-lining.

5. Pay attention (without freaking out) to the toys you buy for your kids. Avoid lead paint and soft plastics that contain phthalates.


6. Shop the perimeter of the grocery store and avoid processed food. Even better, choose organic and locally grown meats, dairy, fruits, and vegetables.


7. Try to get the plastic containers out of your kitchen and replace them with glass containers.


8. Make a vow to stop buying bottled water—NOW. Instead, buy a water filter pitcher and keep two in your fridge at all times.


9. For cleaner and healthier air, open your windows once a day when the outside temperature is comfortable.


10. When buying new stuff for your home, focus on green products especially mattresses and carpets.

Just remember...easy simple steps are all you need to take to start making changes! I'm slowly changing our house over to a Green home, and I'm loving the changes I'm seeing :)

Menu Plan


Well Summer is here! I just wish it was ACTUALLY here! We had rain almost all last week, and this coming week...who knows! They say it's going to get warm, but I'll believe it when I see it :)

Blueberry Energy Smoothie

For all you busy moms out there...this is the smoothie for you!!!

  
When I came across this little beauty over at my friend Erin's blog, I just knew I had to make it!
By far, my favorite so far!
Not only is it perfect for the summer time, but it also gives you the energy you need to get through the rest of your day! I enjoy it for lunch, with some fresh fruits and veggies, perfect healthy meal!


Here's what you need!
(you can find it here)
1/2 cup frozen blueberries
1/2 frozen banana
1/2 cup Ginger Ale
1/2 cup lime juice
2 scoops Vanilla Protein (as you know, I prefer Shaklee, just make sure it's good quality!)
Optional - Ice, if you're wanting a thicker smoothie, add the ice, I liked it thinner actually.
I also added 2 Truvia packets, it was a bit tart without it for me, just give it a taste before you add it!

YUM!!!

Kid-Friendly Chicken Strips

If you're like me, your kids LOVE chicken nuggets! I've been on the hunt for a "healthier" version for them. When I came across these Chicken Strips, I had to try them, and you know what...the kids LOVED THEM!!!


I even asked my 5-year old son if he wanted those nasty processed nuggets, or if he wanted me to make these strips, and he didn't hesitate! He said "CHICKEN STRIPS!"


 Here's what you need!
Mustard (all I had was Honey Mustard), Corn Flakes, Honey, Egg & Chicken Breasts


Preheat your oven to 450 degrees. Cut your chicken into strips.

In a shallow bowl, combine egg, honey and mustard. In another dish, add the crushed cornflakes.


Dip chicken strips into egg mixture; roll in crumbs to coat. Arrange chicken strips on an ungreased baking sheet. Bake for 12 minutes, or until all sides are golden brown and chicken is cooked through!


Crispy Chicken Fingers Recipe
Makes: 4 servings
Ingredients
12 ounces skinless, boneless chicken-breast halves
1 egg, slightly beaten
1 tablespoon honey
1 teaspoon prepared mustard
2 cups cornflakes, finely crushed
Dash of black pepper


1. Preheat oven to 450 degrees F. Cut chicken into 3-by-3/4-inch strips. In a shallow dish, combine egg, honey, and mustard. In another dish, stir together cornflake crumbs and pepper.
2. Dip chicken strips into the egg mixture; roll in crumb mixture to coat. Arrange chicken strips on an ungreased baking sheet.
3. Bake about 12 minutes, or until outsides are golden and chicken is no longer pink.

Peanut Butter Cup Smoothie

I LOVE Peanut Butter Cups!!!
But unfortantley, they aren't the best thing for you!
So this is where this smoothie comes from!!! My two favorite things....chocolate...& peanut butter!!


Here's what you need...
8 oz almond milk
1 scoop quality chocolate protein powder (here's my favorite
1 tablespoon All Natural creamy peanut butter
ICE

Add all to the blender...and drink up!!!


Now if you want to be rebellious...make it a little more decadent! Add some whipped topping, chocolate syrup & a cherry!! Yup I did...it was worth it :)
